Once the crackers are breadcrumb size place the Cheez-it's in a bowl and set aside. Then butterfly the chicken breasts being sure not to cut all the way through as this will better hold the cheese in. Fold one slice of pepper jack cheese and ham together. Make sure to fold them to fit within the chicken breast. Stuff the chicken breasts with the folded ham and cheese and pin together using toothpicks. Generously coat the chicken breasts with ranch dressing on both sides then layer the chicken breast with the Cheez-it cracker crumbs. Transfer to a cooking sheet. Bake chicken breasts at 350° for 45 minutes or until the internal temperature reaches 165°. For a crispier Cheez-it crust bake at 375-400°. Remove toothpicks, serve and enjoy!
